Chocolate is Always in Season

Chocolate

For me, chocolate is best in its purest forms. A bar of chocolate with a high cocoa content is the  perfect company in my office while searching for new ideas.  .  Over the years and a lot of chocolate I’ve learned to pay attention to the labels- of the bars I buy. Like wine, chocolates can vary greatly in taste depending on where the cocoa bean is from, it’s combination with other beans and how long it was roasted. Unlike seasonal items chocolate doesn’t have a season it's always in season!

My Favorite Ganache Recipe

  • 8 ounces finely chopped semisweet chocolate
  • 1 cup heavy cream
  • 2 tbsp. unsalted butter
  • 2 tbsp. light corn syrup

Place the chocolate in a heatproof bowl. Combine the cream, butter, and corn syrup in a saucepan. Stir over medium-high heat until the butter is melted and the corn syrup is combined with the cream. Bring to a boil. Just as the bubbles start to rise, pour the hot cream mixture over the chocolate. Let stand for 1 min. Stir until smooth and creamy
