Junior + Suzanne, San Clemente Estate

Junior + Suzanne recently wed at the bride’s family estate in San Clemente. The two love our cafe, Ellie's Table, so they decided to hire Jay’s to provide the rentals + a tropical menu for their grand event. Event Specialist, Janice Lewis, did a fantastic job coordinating the details of the couple’s big day.

2All of the wedding festivities took place in the sprawling backyard of the Greenwood Estate. Vows were exchanged on the tennis court, surrounded by lush greenery, antique décor + the couple’s dearest loved ones.
34The wedding décor was a mix of vibrant colors, Hawaiian style and rustic accents. Island leaves were scattered about the event grounds + reclaimed wood pieces made the space feel cozy. To tie his classic suit into the fun color palette, the groom sported a blue, polka dot bow tie, a bright orange pocket square + a succulent boutonniere.
5Instead of the traditional set up, they opted for a more intimate feel, having the some of the wedding party sit on furniture next to them during the ceremony.
6After the ceremony, guests were treated to cocktail hour with libations + our delectable hors d’oeuvres. For drinks, we offered premium bar service, including Suzanne + Junior’s signature cocktail, the “SUPpy love.”
7Jay’s served up crab cakes with a mango papaya salsa + vegetable spring rolls with a Thai ginger sauce. We also set up a gourmet salsa station that included our famous traditional salsa, salsa verde, mango papaya salsa, pico de gallo, guacamole, creamy queso fundido + our homemade tortilla chips.
8Every step of the celebration was reflective of the couple’s infectious personalities + adventurous spirit. For a personal touch, Suzanne + Junior incorporated paddle boarding, one of their favorite activities, into the decorations. Paddles were used to display table numbers + oar key chains were given as favors. A special paddle with the initials “s+j” was set in front of the newlyweds on their sweetheart table.
9The reception gathering was full of excitement as guests watched the two share their first dance together. For dinner, Jay’s offered three delicious options: Polynesian chicken, tofu sautéed in a Polynesian sauce, and Kahlua pork with a pineapple + brown sugar glazed. The authentic island cuisine was served with jasmine rice, a wild cherry salad + Hawaiian sweet rolls.
10The rest of the evening was spent enjoying the company of friends + family, while celebrating the happy couple by candlelight. Guests visited the wacky photo booth + got down on the dance floor. It was definitely a joyous night to be remembered.

Homefront America's Heroes Night Out Dinner

Homefront America is a volunteer outreach, non-profit organization that supports military families. In 2005, Arthur Hasselbrink + Mamie Yong Maywhort founded Homefront with a mission of honoring those who courageously defend our freedoms and serving their families with quality care in times of need. The organization runs programs for military children, hosts holiday events and distributes donated supplies. Each year, they hold a “Heroes Night Out” event to give back to military families.11 This year’s festivities were held at the stunning Serra Plaza in San Juan Capistrano. Jay’s was selected to prepare dinner, drinks + dessert for the 400 guests. Our Event Specialist, Patti Robledo, coordinated the cuisine + made sure that every detail fell into place beautifully. 8It was a night to be remembered, full of sincere camaraderie + entertainment. Families were invited to take pictures at the photo booth, enter a raffle for an assortment of prizes + mingle with others. 43Before the meal, Color Guards and the 1st Marine Division Band from Camp Pendleton performed for the gathering. The whole event was woven together with a spirit of patriotism and appreciation. Heartfelt speeches and awards were also given during this time. 6For the meal, Jay’s served up traditional Italian cuisine buffet style. We offered our homemade Italian meat lasagna, vegetarian lasagna, meatballs, caesar salad + freshly baked dinner rolls. These classic menu items were intended to conjure up a sense of comfort and home.7Jay’s provided an assortment of drinks at the bar. We also crafted five special cakes to honor the men + women that have served our country. Each one was decorated with a different branch seal, representing the Air Force, Army, US Coast Guard, Navy + Marines.
5After the sun had set, the grounds were brilliantly lit by strung lights overhead. Segerstrom Center for the Arts concluded the celebrations with a comedic, musical show. After all, Heroes Night Out is all about giving guests a chance to leave their stresses at home and enjoy a cheerful time with loved ones.

Rancho Capistrano Winery's Upcoming Bridal Open House

Next week, Jay’s Catering will be participating in Rancho Capistrano Winery’s Bridal Open House. As one of Orange County’s newest wedding venues, the winery will open its doors to future brides, wedding professionals and vendors for a night of entertaining inspiration.4This beautiful micro winery is located in the heart of downtown San Juan Capistrano.
Although the space opened in spring of this year, the adobe style building fits in perfectly with the surrounding, historical architecture. The venue mixes classic exteriors and fixtures with modern accents throughout. Whether you’re saying your vows out on the stretching patio or inside the lounge with a glass of wine, this venue is an ideal place for a Southern California wedding.2 At the open house, guests will be able to sample a selection of Rancho Capistrano’s locally made wines while they peruse vendor tables and chat with professionals in the industry. As a featured caterer at the event, Jay’s will be will be hosting a table of delicious dessert options for the brides to taste. Celebrate Recovery's West Coast Summit Conference

This past week, Jay’s took on one of its most prominent events of the year: Saddleback Church’s Celebrate Recovery Annual West Coast Summit. This year’s summit included over 3,000 participants, all gathering together for three days of training and fellowship. For Jay’s Catering, this meant preparing over 9,000 meals for the volunteers and attendees. Let’s just say, organization and preparation were key.2Days before the summit, our Jay’s Catering headquarters looked more like a hive of diligent worker bees than an office and kitchen space. At times, over 60 people packed into the kitchen, which was in operation 24 hours a day during the preparation period.
3Shellie Brison, Stephanie Kearns, Claudio Loyola and Kiko Lazos had the task of making sure every detail went according to plan. With much help and coordination from the entire Jay’s team, we were able to make the event a smooth success. At the client’s request we prepared breakfast, lunch, mid morning and afternoon snacks each day accompanied by an end of the week BBQ on Friday. With this challenge, we also had to provide variety with vegetarian and gluten free options at each meal.
411Though the West Coast Summit was considerably larger than our typical events, our focus was to not compromise our signature Jay’s quality due to our increase in mass production. The items in each meal, boxed lunch, and snacks were made in-house with fresh ingredients and great attention to detail.
5For breakfast each day, guests could choose between a sweet, freshly baked pastry, like cinnamon or pecan rolls created by our French Pastry Chef Jean Christophe Milon, Gina’s Apricot Oatmeal Bar, a gluten free blueberry scone or a gluten free caramelized pineapple coconut bar.
6Daily box lunches were a gourmet and hearty spin on our elementary school days. Three delicious options were offered each day, ranging from our Turkey Focaccia to our Gluten Free Chinese Chicken Salad to our Grilled Marinated Vegetables with Hummus & Pita Bread. Each box lunch included a side salad, fresh fruit or a homemade baked treat from Jay’s.
7To keep the summit attendees sustained throughout the long days, Jay’s offered a morning snack between meals and freshly baked cookies during the afternoon break, including a gluten free chocolate chip cookie.
9On Friday evening, Jay’s wrapped up the summit with a good old-fashioned barbecue. We grilled up hot dogs and burgers for everyone while they shared their experiences of the summit over dinner. To complete the backyard BBQ feel, we served pasta salad and baked beans for sides.
8 The late nights and early mornings were definitely worth the joy of this experience. We cherish the opportunity to serve such a wonderful group of people. Thank you Saddleback Church + Celebrate Recovery for trusting us to feed your guests.

Rogue Collective Grand Opening

Just weeks ago, Rogue Collective opened its doors to the public. In celebration of their first research and design think tank, The Attic, the company hosted an open house event to show off their new collaborative space. Let us assure you, Rogue lives up to its name; the office is anything but a typical collection of gray cubicles.
image2When you first walk in, you’ll see the Rogue Collective sign hanging on the wall in front of you. The logo incorporates a French bulldog, which is modeled after the co-owner’s pet, atop a reclaimed wood backdrop that sets the tone for the rest of the space.
image3The evening festivities were about building community. Allowing friends, family and curious strangers to stumble in and see what Rogue is all about. On the morning of the event, Jay’s Catering was asked to pull together a small bites menu for the party. Though last minute, we agreed to the opportunity, knowing that the Jay’s team would be able to meet our client’s needs, even with the constraints of a tight deadline.
image4Though the process may have been unconventional, the evening’s cuisine did not suffer at the hands of the ticking clock. We wanted to provide an inventive selection that mirrored the Rogue nature and mentality. For appetizers, we served up crab cakes topped with a tangy mango salsa, a tarragon chicken salad in a puff pastry shell, and chicken satay coated in a peanut sauce.
image5As for office decor, the space can be described as a mixture of modern, minimal and American heritage aesthetics. The owners’ intention was to design a pleasant and efficient work environment that would inspire creativity.

Cory + Nikki, The Casino San Clemente

Cory + Nikki were newly wed in the beautiful Rock Garden at The Casino San Clemente. Jay’s was hired to cater the wedding with a special selection of food + drinks. Everything was pulled together wonderfully by our Event Specialist, April Chaim. 2 The wedding decor was an eclectic mix full of Art Deco accents, Mexican flare + a pastel color palette. Every detail exuded a thoughtful elegance, from the glamorous invitations to the bride’s ruffled gown + stunning accessories.74 The two exchanged vows in front of the historical fireplace adorned with family wedding portraits of the past for a personal touch. As they made their way back up the aisle as husband + wife, the intimate crowd of loved ones cheered with excitement. 810 After the ceremony, guests made their way indoors to the West Wing for the reception festivities. Jay’s prepared delectable eats that would mirror the unique personality of the couple’s big day. Instead of a traditional plated meal, we took a more casual, fun approach by hosting different stations of cuisine.These tasty bites included gourmet tacos, Mexican infused citrus salad, oven baked chicken empanadas, homemade chips with a specialty salsa, and more. 5 The tables were dressed with light toned materials, succulents and metallic centerpieces. Hand-painted tiles served as seating markers, adding a vibrant contrast. 9 To accompany the vintage spirit of the wedding, Jay’s served up one some of their signature cocktails, including: sangria, mint juleps + other premium beverages. The guests sipped, danced + celebrated the night away. 6 Of course such a gorgeous wedding wouldn’t be complete without the perfect cake. The couple chose a three-tiered chocolate cake with vanilla bavarian filling. They added a touch of personality to their cake and created a tier of Jay’s specialty carrot cake with cream cheese filling . A striping texture along with floral + succulent accents completed this simple, yet classy dessert. 311 We’d like to extend a thanks to Cory + Nikki for letting us play a part in their special day.
