Today in Numbers: Jay's Busiest Day of the Year
Today, Saturday, December 13th, marks the most wonderful (aka the most busy) day of the year for Jay’s Catering. To say that this 24-hour period is a little more demanding than a normal day in the life of Jay’s would be a grand understatement. There are few things we love more than this holiday season. All the gathering of loved ones, the decorations, the beautiful change in weather and of course, the delicious food & warm drinks.
That’s why we love getting to play a part in our customers’ festivities. Instead of laboring in the kitchen for hours to feed a host of guests, Jay’s takes over your holiday meal or event, so that you can enjoy celebrating with friends, coworkers and family. While we love making our clients’ season a little bit brighter and less hectic, this equates to quite the crazy schedule for our team. That being said, we’d like to think that after years and decades of catering holiday parties, Jay’s has come up with a fairly sophisticated system for executing all these feasts and events.
This year, we wanted to give you an inside look into the ins and outs of our complex operation by breaking down the numbers. Today consists of holiday parties, weddings, corporate events and much more. All hands are on deck, ready to make this a successful day for Jay’s, our wonderful clients, and their guests. Anthony + Yvette, The Ebell Club
Here’s to another spectacular wedding at The Ebell Club. Anthony + Yvette recently exchanged vows in front of their loved ones at this Long Beach venue. The couple had Jay’s cater their cocktail hour, dinner and dessert station. Our Event Specialist, Richelle Davidson, coordinated the details of the day just perfectly.The gorgeous Ebell Club hails from an earlier time. Its exquisite architecture echoes that classic look of 1920’s California design and style. For Anthony + Yvette, they embraced this romantic, Spanish feel for their décor and added personal touches to make their special day an event to remember.
As for the ceremony, the two wed in The Courtyard in front of the magnificent, tiled fountain. Petals lined the aisle as the beautiful bride, dressed in a stunning ruffled gown, made her entrance.
The décor was a mix of elegant touches and vibrant flair. Scattered florals and the couple’s adorable sweetheart table added a pop of color, while more traditional, neutral linens and metallic accessories provided that sense of old fashioned glamour that’s reminiscent of the ‘20s.During cocktail hour, guests could visit the bar while our team passed around trays of delicious hors d’oeuvres, including Filet & Wild Mushroom Wellington served with Béarnaise Sauce and Chicken Spring Rolls with Peanut Sauce. When it was time for the reception festivities, guests made their way into The Grand Hall for dinner. The room was quite the scene, fit with tall windows and warm light from the chandeliers overhead. For the meal, Jay’s prepared a buffet full of gourmet, comfort food options. Guests could choose between BBQ Pulled Pork or BBQ Chicken along with our tasty Baked Beans, Mac and Cheese and Caesar Salad. The rest of the evening was spent dancing, enjoying each other’s company and of course, visits to our dessert table. The Jay’s team prepared cupcakes, a small textured, frosted cake and a naked tiered wedding cake topped with a sweet banner adorned with the couple’s names.Thank you Anthony + Yvette for letting us play a part in your amazing wedding and celebration. Jay's Take on Protein and Greens
As much as we love the event culture that Jay’s is immersed in, once and a while, we need to take the time to focus on the heart of what we do as a catering company: food. Our menus are extensive, ranging in numerous forms of cuisine and styles. With that said, no matter the quantity of recipes we can offer, our priority will always be to present our customers with quality fare that’s tailored to their needs.
Quality can take many forms. Sometimes it means simply executing a traditional dish perfectly with the best ingredients. Other times, it’s about taking creative liberty and adding an unexpected spin on an otherwise expected item. At Jay’s, we value innovation and high integrity cooking. Our culinary team's approach in the kitchen is to first take advantage of all the amazing produce California has to offer. Then comes the protein, in all its glorious forms.

Whole Roasted Chicken: Herb Butter glazed Poulet Rot with free range chicken from Mary’s Chicken farm and a natural au jus.
Shrimp: Fried Pacific White Gulf Shrimp to peal & eat.
Chicken Legs: Herb rubbed chicken legs seared, oven roasted, and served with a natural au jus butter.
Ground Chicken Pancakes: Organic Zucchini from Windrose farms in Paso Robles, CA prepared into sausage pancakes with ground seasoned leg meat chicken from Mary’s farms.
Pork Belly: Kurobuta all natural pork belly. Natural herb seared and oven roasted.
Tri Tip of Beef: Certified Angus Chimichurri Beef that's trimmed, sprinkled with sea salt, roasted, and then topped with a chimichurri compote of fresh Italian parsley, cilantro, roasted garlic and spicy Argentinean chile.
Groslegumes hand cut organic Rutabaga and Celery Root.
Baby Heirloom Carrots and Pan Seared Asparagus: Tossed in extra virgin olive oil, fresh thyme, sage and sea salt, then fire roasted.
Lardo Frisse Salad with oven roasted Oyster Mushrooms: Tossed in a chicken liver shallot vinaigrette.
Melissa + Videnne, Serra Plaza Wedding
Melissa + Videnne held their wedding ceremony and reception at the picturesque Serra Plaza located in the heart of San Juan Capistrano. The two hired Jay’s to cater a meal that was both nostalgic and, of course, delicious. This historic, open space was the perfect setting for this thoughtful couple to wed. They wanted each element of their wedding to be a personal homage to the people, places, and experience that have shaped them. The whole day had a classic and romantic feel to it. Vows were exchanged in the Grand Plaza Courtroom among their family and friends sitting in old-fashioned pews. The outdoor setting provided beautiful lighting and the rustic, old world, surrounding architecture set the scene.
All the decorations were simple and elegant DIY touches. The color palette was neutral, with predominantly blush and gray tones along with the occasional gem. Instead of a traditional guest book, the couple decided to get a Snellen eye chart poster that read “And they lived happily ever after” and had guests sign the frame so they could hang it up in their home.
As for the reception, the couple worked with Jay’s to create a culinary experience that reflected their most treasured memories. During cocktail hour, guests were invited to order Philly cheesesteaks the proper way, since the two considered the City of Brotherly Love their second home. After the mingling, everyone sat down to enjoy the meal we created for the couple’s big day. For entrees, guests could choose between our Chicken Breast with Zucchini Lime Bread Stuffing served with Lime Chardonnay Sauce or our Tri Tip Carvery with Argentinean Chimichurri and Charred Three Onion Sauce. And for sides, we four tasty dishes including Garlic Mashed Potatoes, Tortellini with Creamy Pesto, Marinated Grilled Vegetables and Pear & Walnut Salad. For dessert, we set up our famous S’more Bar complete with artisanal marshmallows made from scratch. The couple’s cake reflected the elegance of the event. It was a four-tiered, white lace-textured cake dressed in scattered florals and an adorable “LOVE” topper. The rest of the evening was spent dancing the night away with brilliant strung lights and paper lanterns overhead. Harvest Engagement Inspiration Shoot with Southern California Bride
Jay’s was recently asked to take part in a harvest engagement party shoot for Southern California Bride, an online resource for brides getting married in Southern California. This inspiration shoot took place at the spectacular Ecology Center located in San Juan Capistrano. We were able to work alongside an incredible group of local vendors to create this lovely, autumn farm-to-table gathering. Our event specialist Nickie Good, did a wonderful job planning a menu that suited not only the exciting change in weather, but also the venue culture. While the Ecology Ecology Center does not host weddings, it offers the perfect scenery for a small eco-friendly event. It’s also an education center that teaches community environmental solutions. The 1-acre stretch of land houses a general store in a historic farmhouse alongside eco-labs, and abundant landscapes. This space provided the perfect atmosphere and backdrop for our fall shoot. Alongside the farmhouse table dinner, a fun beer garden was included in the party’s festivities. Left Coast Brewing Co. provided an amazing selection of their crafted beers.
All in the Detail Design handled the event coordination, organizing all the pieces of the evening together perfectly. As for the stunning bride-to-be, Love & Lace Bridal Salon provided the gorgeous lace bodice dress, while hair and makeup were styled by the talented Beauty and the Beach. Petals & Stones pulled the look together with stunning jewelry and creative direction. The party was set in a lush outdoor space beside the Congdon Farmhouse. Folklore Vintage Rentals contributed their furniture and Enchanted Fine Florals decorated the scene with the season’s most magnificent florals. And the adorable stationery and menu signs were made by Lucy Celebrates. For this specific shoot, we wanted to create a meal that tailored to the surrounding environment: fresh. The first course included our Bruschetta Pomodoro with sliced baguettes. For the second round, we had our tasty Antipasto Skewers with Genoa salami, cherry tomato, Calamata olive, and Buffalo mozzarella. As for the third, we prepared our delicious Grilled Zucchini Roll-ups made up of lightly grilled zucchini ribbon, Boursin cheese, micro greens, and roasted pine nuts. Of course we can’t forget dessert. For the sweet, we served our Dried Apricot Pecan & Mascarpone Tarts. And Rooneygirl Bakeshop made the most ideal cake for the shoot, complete with a wood-like frosting texture. We absolutely loved getting to be a part of this splendid, harvest inspiration shoot alongside these wonderful vendors. Thank you to Southern California Bride for including our cuisine in the shoot. A New Chapter for Jay's
Exciting things are happening at Jay’s. We like to dream big, always looking for new opportunities to grow and expand in the fields we’re passionate about. This past week we were able to enter into a new chapter of our story. Now, you’re all probably wondering what this change is. Well it’s awesome, we can tell you that. When it comes down to it, entertaining is at the heart of what we do. Whether we’re catering a wedding, a corporate party or a small gathering, our mission is to bring people together. And what suits a good meal better than a beautiful setting?
That’s right folks, we’ve decided to open our own venue! This crazy idea had been tumbling around our heads for some time, so we set out to find the perfect location that would compliment Jay’s style and philosophy. This week, our wishes became a reality as we were handed the keys to this magnificent building. The structure is a historical rarity for Orange County, as it still contains the original brick and exposed beams. Instead of spilling everything at once, we’ve decided to share little pieces of information at a time. So here are a few inside glimpses of our new space. We hope you’re as enthusiastic as we are about this adventure. Making this place our own is going to be quite the incredible experience and we couldn’t imagine it without the support of all our wonderful customers. Stay tuned for more details and updates!
